ABOUT SANTOSH SHAH

A head chef at Cinnamon Kitchen London, former executive chef at Lalit London

After working as an executive chef at The Lalit London, he has mastered the art of serving the most dynamic Indian meals to the city dwellers. Chef’s extraordinary talent and humble nature stays with people who taste his food.

Taking his local Nepali ingredients international, he often makes use of ingredients in his dishes from his homeland like colocasia leaves stems, timbur and tarul. His favorite ingredients and spice from Nepal so far – jimbu (Himalayan wild garlic leaf) timbur ( Nepalese Sichuan pepper) Tarul (Nepalese Himalayan yam) rayo ko sag (Nepalese mustard greens) and gundruk ( fermented green leaves and sun-dried). He has also experimented with Nepali ingredients include jimbu spice to marinate lamb and kodo (millet) in puddings with outstanding results.

After 13 years of cooking in hotels in India and Montenegro, Santosh moved to the UK, starting his career at Dishoom, before moving onto Benares, a Michelin star in London. He then spent two years at renowned City restaurant Cinnamon Kitchen, working with Vivek Singh, where he was given creative license to experiment, being the first chef to introduce octopus to an Indian kitchen!

After spending two years at Cinnamon Kitchen, Santosh moved on to become Executive Chef at Baluchi, a contemporary fine-dining Indian concept at the five-star LaLit Hotel in London, housed in the Grade II listed former St. Olave’s Grammar School’s Assembly Hall.

Renowned in the area for his knack of experimenting, the chef is known for his peculiar recipes, one such being a Tandoori octopus!
